There are lots of vitamins packed into these juicy red foods – vitamins A, C and E are the main ones that you are probably going to want to know about. There are other mineral salts packed in there too alongside potassium and flavenoids, which act as natural anti-inflammatories.

Take pizza for example – why not try to mix things up a little to make it a tad healthier. Roasted tomato and artichoke flatbread pizzas, for example, are the perfect thing for impressing a loved one and are actually very simple to make.
With naan flatbreads, artichoke hearts, grape tomatoes, a touch of olive oil (extra virgin is best here), a dash of parmesan cheese, some sea salt and cracked black pepper and a touch of lemon juice and you have a delicious and healthy alternative to the conservative pizza. Why not try creating this rather than ordering one in next time you have the girls over for the night?

If you want something similarly Italian but less pizza-based, you could always go for a classic tomato-based sauce for a traditional Italian meal. With pasta shells that are whole-wheat, and a sauce created from butter, baby spinach, red pepper, chicken broth (low-sodium is best), salt and pepper, grape tomatoes, a touch of fresh parsley and Romano cheese, you have a delicious meal that contains fewer than 400 calories, and that any Chef would be impressed with.
Now it’s coming into summer, you are going to want foods that you can easily create on the BBQ and one of the easiest things that you can cook is salmon. Why not try serving up a nice plate of BBQ-cooked salmon with cheery tomatoes that have been roasted?
With cherry tomatoes, thyme, olive oil, cooking spray, pepper and garlic, you can chuck a few ingredients in the salmon, wrap it up in foil and leave that to cook on the BBQ and whilst this is going on, toss your tomatoes together with the olive oil, garlic and thyme and chuck them in the oven or in a BBQ-safe container next to the salmon. It’s quick, easy and pretty impressive when you think about it!
Oh and before we forget – there’s only 270 calories…
There are plenty of things that you can easily create with the humble tomato. Why not try your hand at making whole-wheat tomato bread or make a tomato-based soup to enjoy with some crusty healthy, homemade bread? You could make quiches and tarts to enjoy hot or cold, and you could even just go back to basics and toss them in a lovely and colorful garden salad. The tomatoes are a pretty universal food and it would be a shame not to utilize them this summer….
