On a hot summers day there is nothing better than enjoying a lovely salad in the yard on balmy evenings and good company. If you want something super healthy and deliciously fabulous to serve up for your friends this summer, you have most definitely come to the right place.
There are certain foods that come into season right around now and these are the ones that you should be looking at grabbing next time you hit the fresh produce aisle in the supermarket.
Try looking for things like:

Also, there are certain fruits that are definitely tastier at this time of year. Why not try checking out fruits like raspberries, peaches, plums, currants, apricots, pears, guava, figs and grapes.
Bearing these foods in mind, you probably already have a thought about the nutritional content of the foods that come into season at this time of the year. Why not consider throwing together some fresh ingredients for a green bean and corn salad? It’s simple, easy and you can serve it with pretty much any meat you like.
With some fresh basil leaves, pepper, salt, extra-virgin olive oil, cider vinegar, 2 cups of green beans, 5 ears of corn that have been shucked, 8 cups of arugula and half a diced red onion.
You cook the corn and the green beans for a few minutes in boiling water, drain and then cool for a couple minutes in ice water. Throw the arugula in a serving bowl alongside the diced red onion, corn kernels and green beans and drizzle a mixture of the vinegar whisked with the salt and pepper, olive oil and basil! You could serve this with fresh salmon cooked on the BBQ, fresh chicken, and plenty of others.
You could even boil some fresh new baby potatoes tossed lightly in butter and mint. This salad is as universal for whatever you need it to go with!
You can even throw fruit into a salad for a really healthy taste-kick. We already know that apples taste great in many salads but what about trying to throw some mango into the mix? Tomato, cucumber and mango salads are delicious for warm summer days or nights, and with a lovely crisp glass of white wine and some fresh fish or meat skewers, you have yourself the perfect recipe.
Peel and dice up 3 cucumbers and combine with 3 large sliced tomatoes. Peel and slice 2 fresh mangos and throw those in the large bowl as well. With ¼ cup of honey and ½ cup of cider vinegar, chuck in around a teaspoon of salt and drizzle over the mixture. Once served, sprinkle some fresh chives over the top and you have yourself a very quick and actually pretty impressive side dish that goes with pretty much anything else.
Finally, we bring something a little different to the table. We think that everyone should try their hands at goat’s cheese and avocado salad at least once in their life, and this is how you make it!
Throw 6 sliced scallions into a food processor or blender and add ½ diced red bell pepper, ¼ cup of fresh basil leaves, a couple of tablespoons of lime juice, preferably freshly squeezed and a touch of salt and as the motor is running and everything is getting nicely diced up, you will want to drizzle in some extra virgin olive oil until you have a nice looking dressing. You will want to give the dressing a taste to ensure that you have not put too much oil in.
You should grab yourself a large serving bowl once you are done with the dressing and in the bottom you should throw in the head of fresh Romaine lettuce leaves that you have ripped apart and tossed under water to clean. Throw some diced avocado on top of this, add a cup of rinsed and drained garbanzo beans and throw a few sliced cherry tomatoes in.
Once you have drizzled your fresh dressing over the top, you should throw on some ripped up pieces of goat’s cheese and this is something that you could easily serve with crusty white fresh bread for a delicious lunch or even with fresh meat kebab skewers for a BBQ party in the evening. Again, another classic and easy salad, ready for any meal or occasion that you can throw at it!
